Broccoli Slaw (Root to Stem)


Grate the stalks into slaws for colour and texture.


Broccoli Root Stem and Blue Cheese Slaw

2 Carrots grated

1 Finely sliced red onion

1 White cabbage finely sliced

150g Crème fraiche

1 lemon

50g blue cheese

5 tbsp Mayonnaise

2 Broccoli stalks grated


1. Mix together the carrot, onion, cabbage and broccoli stalks together


2. Blend the blue cheese with the cream fraiche, add lemon juice


3. Bind with mayonnaise and mix together
